Blueberry Pancakes

The farm is past full bloom, the weather is warming, the bees are out doing their job, and we have butterflies in our tummies as we think of what this all means… The time for u-pick is so close that we can almost taste it! And speaking of tasting, we wanted to share a simple yet tasty blueberry pancake breakfast recipe that you can use with the berries you and your family pick.

 

Who doesn’t love a fluffy pancake? And plain pancakes are… well just that, plain. Have you ever tried blueberry pancakes?

 

While some might enjoy their pancakes to be as simple as they can be, there is no denying that adding a little sweetness can make them irresistible. Some people add sweets like chocolate chips, or even peanut butter cups to their pancakes in order to get some extra flavor into their breakfast. We won’t argue that adding chocolate to your breakfast is a delicious treat, but nothing beats the ever-sweet and slightly healthier option of adding fresh fruit! The best fruit to add in our opinion? Blueberries!

  • prep time: 10 minutes

  • cook time: 10 minutes

  • total time: 20 minutes


    Ingredients:


  • 3 cups flour

  • 2 tablespoons baking powder

  • 2 tablespoons sugars

  • 2 cups milk

  • 2 large eggs

  • 2 tablespoons vanilla

  • 1 tablespoon butter

  • 1 cup blueberries (fresh or frozen)


    Instructions:


  • Whisk together flour, baking powder and sugar.


  • Add eggs, milk, and vanilla and whisk together until just combined.


  • Heat non-stick pan over medium heat and melt 1 tablespoon of butter.


  • Pour about 1/3 cup of batter into the pan (or to the size that you prefer), and drop a few blueberries on top.


  • Cook until you see little bubbles on top and the edges start to firm up.


  • Flip and cook for another 2 – 3 minutes or until pancake is cooked through.


  • Serve with butter and maple syrup.


  • Enjoy!
