We price our beef based on the hanging weight which is the weight of the carcass after initial slaughter and processing. We use this because we are selling by the quarter, halve or whole animal.
In general the hanging weight is about 60% of the live weight.

A custom-exempt meat processor only processes meat for the owner of the animal. The meat cannot be sold and can only be consumed by the owner of the animal, owner’s immediate family or non-paying guests. This means that we are selling the cow and butchering it as a curtesy.
Custom processed meat must be labeled with “NOT FOR SALE”. Businesses that operate under this exemption are inspected less frequently than those under constant inspection, though these processors are under the same requirements for sanitation and construction as State and Federal plants.

There will be an order form that will ask for your basic information as well as whether you want a quarter, half, or full cow. After the animal is sold to you, it is your property.
Pick up will be available on the farm and you will be prompted to choose a time slot during Friday or Saturday.
To place an order there will be a required down payment of 20% of the hanging weight. The remainder of the payment will be taken at pick up.
