Blueberry Scones

Ingredients:
- 2 cups flour
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 cup heavy cream
- 1 cup fresh blueberries
- 5 tablespoons of unsalted butter (cut up cold)
- 2 cups confectioners sugar (sifted)
1 tablespoon unsalted butter (melted)
Instructions:
Preheat the oven to 400 degrees.
- Sift together the flour, baking powder, salt and sugar. Then blend in the cold butter so that the batter is coarse and crumby.
- Carefully, so not to mash them, fold the blueberries into the batter.
- Make a well in the center and pour in the heavy cream (leaving some extra to brush scones with later). Fold everything together without overworking the batter.
- Lightly flour your surface and then press the dough out into a rectangle. Cut the rectangle in half multiple times until you have small squares that you can cut diagonally to make the triangle shape of a scone.
- Place them on an ungreased baking sheet and brush lightly with some heavy cream. Then bake for 15-20 minutes.
- While they bake, whisk the confectioners sugar and melted butter in a double boiler until smooth to create your glaze.
- Let the scones cool before pouring the glaze over them and enjoy!
