Blueberry Scones

    Ingredients:


  • 2 cups flour

  • 1 tablespoon baking powder

  • 2 tablespoons sugar

  • 1/2 teaspoon salt

  • 1 cup heavy cream

  • 1 cup fresh blueberries

  • 5 tablespoons of unsalted butter (cut up cold)

  • 2 cups confectioners sugar (sifted)

  • 1 tablespoon unsalted butter (melted)


    Instructions:


  • Preheat the oven to 400 degrees.


  • Sift together the flour, baking powder, salt and sugar. Then blend in the cold butter so that the batter is coarse and crumby.


  • Carefully, so not to mash them, fold the blueberries into the batter.


  • Make a well in the center and pour in the heavy cream (leaving some extra to brush scones with later). Fold everything together without overworking the batter.


  • Lightly flour your surface and then press the dough out into a rectangle. Cut the rectangle in half multiple times until you have small squares that you can cut diagonally to make the triangle shape of a scone.


  • Place them on an ungreased baking sheet and brush lightly with some heavy cream. Then bake for 15-20 minutes.


  • While they bake, whisk the confectioners sugar and melted butter in a double boiler until smooth to create your glaze.


  • Let the scones cool before pouring the glaze over them and enjoy!
